Preparation
The night before soaking the beans, let the water cover them.

The next day we wash the beans very well and put them in the pressure cooker with enough water to cover the beans and exceed them, salt to taste, let the water boil (without covering the pot).
When the water boils we add a green banana chopped into very small squares (if you want to save time with a spoon you can do it much faster) and cover the pot for 20 minutes.

4
While the 20 minutes pass, we fry a stew with onion and tomato and season it with what you like best.
After 20 min, very carefully we uncover the pot and add the sauce that we have just made and leave this on a very low heat so that it seasones while we make the rest of the tray, do not cover again with the lid of the pressure cooker.
5
6
We prepare the rice as we normally do.
To make the bacon very crispy and delicious, we put a layer of lemon and baking soda on the leather and let it rest for 20 min, then we wash it very well and dry it, add salt and fry it in enough oil.

8
Prepare the ground meat, in a non-stick frying pan, fry onion and tomato with oregano, Traditions Andinas, pepper to taste and salt, when the onion begins to appear, add the ground meat and cook until it is very dry.
Fry the sausages in oil until crisp.
9
10
We fry in little oil so that the Traditions Andean plantain plantains are crispy.
We heat the arepitas and cut the avocado.
11
12
We fry the egg in oil, cover it so that the yolk is soft.
And ready! We serve our delicious paisa tray.
