Ingredients

A packet of yellow potatoes Andean Traditions
Four yellow Andean Tradition peppers cut into julienne strips
Andean Tradition botija olives to taste
Two boiled eggs
A quarter cup of oil
A cup of fresh cheese
A pack of Field Soda Crackers
A cup of evaporated milk
Half onion finely chopped
Salt to taste

Preparation

The first thing to do is cook the Andean Traditions yellow potatoes in enough water and salt to taste until soft.

While the potatoes are ready we are going to make the huancaína cream, the first thing we should do is fry the Tradiciones Andinas yellow peppers together with the onion.
Once ready we take to a food processor or to the blender, add the oil, the fresh cheese, the evaporated milk, and the Field soda crackers, here we advise you to add them little by little.

Once the potatoes are ready, we drain them, chop them into slices and place them, and put the mixture that we made in the blender.
We let the potatoes are well dipped in this cream and finally we put slices of boiled egg in the infallible Traditions Andean olive.

And ready! To enjoy this delicious and emblematic typical Peruvian dish.
