Quinoa salad

Ingredients

3 cups of white quinoa Andean Traditions already cooked, cold
Cherry tomatoes, cut in half
Cucumber, diced
1 tablespoon finely chopped scallions
Juice of 1 large lemon
2 tablespoons finely chopped coriander
1 tablespoon of El Conquistador olive oil
Salt to taste
Pepper Andean Traditions to taste

Preparation

In a salad bowl, mix the tomatoes, chopped cucumbers, green onions, cilantro, lemon juice, olive oil, salt and pepper.

Add the cooked Andean Traditions quinoa and mix well.
Serve the quinoa salad on top of the lettuce leaves.
