Yucca croquettes
Ingredients
Four cups of Yucca striped Andean Traditions
Three cups of grated dry hard cheese
Strips of cheese, it can be mozzarella or cheese to melt (they must be strips with the size that the croquettes want)
Three eggs
Two tablespoons of Universal baking powder

Preparation
Cook until the grated yucca boils Andean traditions with salt to taste, it must be very very soft.

When the yucca is with a fork, we crush very well until it forms a soft dough.
Add eggs and baking powder and stir very well.

Add the grated cheese and incorporate it very well.
When we have a consistent mass we can stop stirring.

We grab the cheese strips and one by one we will wrap them in the dough, leaving them elongated, so that the croquettes take shape.
Fry in olive oil El Conquistador, we recommend doing it in a large pot because the oil should cover the height of the croquette.
